焼酎の蒸留時に生まれる「末垂れ」と、レモンサワーの仕込みで使った柑橘の皮。二つの素材を生かしてつくったアルコール度数3%のレモンサワーです。
軽く飲める度数でありながら、個性の強い原酒を使うことで、焼酎らしい香りと余韻がしっかりと残ります。使う末垂れによって、仕上がりは少しずつ変わります。その違いも含めて楽しんでいただきたい缶チューハイです。#ごとに原酒が変わっていきます。
味わい、楽しみ方
レモンの爽やかさの奥に、焼酎の個性的な香りと芳ばしい余韻があります。
アルコール度数は3%。軽やかに飲めますが、味わいまで薄くならないよう、原酒の強い個性を生かして仕上げました。
よく冷やして、そのままどうぞ。グラスに注ぐと、柑橘の香りと、その奥にある焼酎の複雑な風味をより感じられます。
仕込みに使う末垂れは、その時々で異なります。そのため、香りや味わいも毎回まったく同じではありません。今回の一本にしかない個性として、その違いも楽しんでいただけたらと思います。
このお酒の話
「末垂れ」は「すえだれ」と読みます。
焼酎を蒸留するとき、蒸留の時間帯の前半から後半にかけて、取り出される香りや成分が異なります。末垂れとは、その最後の方に出てくる部分です。
後半になると、アルコールだけでなく、もろみに含まれる油分やさまざまな成分も多く現れます。それらは焼酎の個性にもなりますが、油っぽさや焦げたような香りとして感じられることもあります。時間が経つと油分が酸化し、嫌な臭いになってしまう(オフフレーバー)場合もあるため、完成品には加えず、取り除くのが一般的です。そのあとは、産業廃棄物として捨てるときも、次の仕込みへ戻して使うこともあり、その扱い方は蔵によってさまざまです。
少し形は違いますが、酒づくりの過程で生まれ、そのままでは使い道が限られるという意味では、日本酒における酒粕にも似た存在です。酒粕は、食品としての流通などもあり一般的にも知られていますが、こちらの末垂れはほぼ知られていない存在です。
実際、末垂れをそのまま嗅ぐと、かなり油分の強い香りがあります。
しかし、そこにレモンなどを活用すると、柑橘の爽やかさと焼酎の個性が重なります。そこで、缶チューハイとして楽しめる味に整えられるのではないかと考えました。ちなみに使っている柑橘の皮も、オープンブックのレモンサワーを仕込む際に残ったものの二次利用です。
焼酎づくりで取り分けられた末垂れと、レモンサワーづくりで残った柑橘の皮。これまで十分に生かされてこなかった二つの素材から、新しいレモンサワーができました。
図らずも、とても循環的なものとなりました。。
均一な味を目指す定番商品とは少し違います。仕込みごとに変わる末垂れの個性を、その都度、柑橘と組み合わせて一つの味にする。その偶然性も含めて、イージーレモンサワーです。
3%という軽さから、飲み始めでも、そのお酒の個性から、飲み終わりの最後の1杯なんて〆でもピッタリのお酒です。まさに「さいしょとさいご」のレモンサワーです。

A Very Ethical Lemon Sour (Good Grief)
Base Spirit: Brown Sugar Shochu

This 3% ABV lemon sour is made using two ingredients that would otherwise have limited use: suedare, the final fraction produced during shochu distillation, and citrus peels left over from making our lemon sour.
Despite its light alcohol content, we use a distinctive base spirit with plenty of character, allowing the aroma and lingering finish of shochu to remain firmly in the drink.
The character of the finished drink changes slightly depending on the suedare we use. This is a canned chu-hai that we hope you will enjoy not only for its flavor, but also for those subtle differences from batch to batch.

Flavor & How to Enjoy
Behind the refreshing character of lemon lies the distinctive aroma of shochu, followed by a warm, toasted finish.
At 3% ABV, it is light and easy to drink. But we have made sure the flavor itself doesn't become light or thin, using the strong character of the base spirit to give the drink depth.
Enjoy well chilled, straight from the can. Pouring it into a glass brings out the citrus aromas and the more complex flavors of the shochu underneath.
The suedare used in each batch varies. As a result, the aroma and flavor are never exactly the same from one release to the next.
We hope you enjoy these differences as part of the unique character of each can.
The Story Behind This Drink
Suedare (末垂れ) is pronounced suedare.
During the distillation of shochu, the aromas and compounds that come through change from the beginning to the end of the distillation. Suedare refers to the portion that comes out toward the very end.
As distillation progresses, not only alcohol but also oils and various other compounds from the fermented mash begin to come through in greater amounts. These compounds can contribute to the character of shochu, but they can also produce oily or burnt aromas.
Over time, the oils can oxidize and develop unpleasant odors, known as off-flavors. For this reason, suedare is generally separated from the finished spirit. Depending on the distillery, it may be discarded as industrial waste or returned to a subsequent fermentation batch and reused.
In some ways, it is similar to sake kasu—sake lees. Both are byproducts of the brewing process whose uses can otherwise be limited. Sake lees are relatively well known and are even distributed as a food ingredient, while suedare remains almost completely unknown outside the world of shochu production.
In fact, smell suedare on its own and you'll find a remarkably strong, oily aroma.
But when combined with lemon and other citrus, something interesting happens. The freshness of the citrus overlaps with the distinctive character of shochu.
We wondered if we could turn that combination into something enjoyable as a canned chu-hai.
The citrus peels we use are also given a second life. They are left over from making Open Book's lemon sour.

From these two ingredients—neither of which had been fully utilized before—we created a new kind of lemon sour.
Quite unintentionally, it became a very circular drink.
This is a little different from a classic product designed to taste exactly the same every time. With each batch, we take the unique character of the suedare and combine it with citrus to create a new expression.
That element of chance is part of what makes Easy Lemon Sour what it is.
At just 3% ABV, it is light enough to be the first drink of the night, yet full of enough character to make a satisfying final drink.
In other words, it's a lemon sour for the beginning and the end.
